- Separate layers. If you have more than one piece, a sheet of baking paper between them helps stop them sticking together.
- Keep it cool and dry. A cupboard away from the stove and out of direct sunlight is a good spot.
- Avoid leaving it out uncovered. Even a few hours on an open plate in humid weather can change the texture.
